Terpenes carry the flavor

Terpenes are the aromatic compounds behind citrus, berry, gas, and every other cannabis note. They are volatile: heat, light, and time all degrade them. That is why processing choices matter. Fresh-frozen extraction, solventless pressing, and careful temperature control all exist to keep terpenes intact from plant to product.

The ones you already know

Terpenes are not exclusive to cannabis. They are the same class of compounds that make citrus peel smell like citrus and pine smell like pine — which is why cannabis aromas are so often described by reaching for other plants. Myrcene — musky, earthy, herbal. The most common terpene in cannabis. Limonene — bright, sour citrus. The compound behind lemon peel. Caryophyllene — peppery and warming. The same compound found in black pepper and cloves. Pinene — pine and rosemary, sharp and clean. It occurs in two forms, alpha and beta. Linalool — floral and soft. The dominant note in lavender. Terpinolene — the hardest to pin down. Fruity, floral and faintly herbal at once. No strain is one terpene. Every strain is a blend, in proportions that shift with genetics, growing conditions, harvest timing and handling. That blend is the strain's signature — and it is why two batches of the same genetics can smell noticeably different.

Why terpenes disappear

Terpenes are fragile in a measurable way. Each one has its own boiling point, and most of the ones that matter in cannabis sit below the cannabinoids: Terpene | Boiling point Caryophyllene | 266°F / 130°C Pinene | 311°F / 156°C Myrcene | 334°F / 167°C Limonene | 349°F / 176°C Linalool | 388°F / 198°C THC, by comparison, sits at 315°F / 157°C. But boiling point is the wrong number to fixate on, and this is where most cannabis writing goes wrong. A 2022 study published in *Cannabis and Cannabinoid Research* found that commercial vaporizers typically operate well below the actual boiling points of cannabinoids and most terpenes — and that both evaporate almost completely over time at temperatures far below those boiling points. Terpenes, having lower boiling points to begin with, evaporate almost immediately. Boiling point is where a compound leaves fast. Evaporation starts long before that. Which is why a drying room smells the way it does at room temperature, and why the countdown starts the moment the plant is cut. Three things drive the loss. Heat is the fastest. Light breaks compounds down directly, which is why concentrates ship in opaque or amber containers. Time does it slowly and unavoidably. Nothing downstream adds terpenes back. Every choice from harvest onward either preserves what the plant made or gives some of it away.

Protecting them

The techniques that dominate premium production all trace to one goal: lose less. Fresh-freezing at harvest bypasses the drying window. Cold, closed-loop extraction keeps processing below the range where the lightest compounds flash off. Solventless pressing at low temperature accepts smaller yield for bigger aroma. Cold storage and light-proof packaging protect the finished product on the way to the shelf. None of these make a product more aromatic than the plant it came from. That ceiling is fixed at harvest. All any of them do is give away less of it.
